These recipes come from friends and family across the United States. They have been compiled into a recipe book, "Country Cooking," and include over 300 recipes. We are sharing a recipe from each of the seven categories:
"Soups and Salads"
ESTHER'S SALAD
("Really rich!")
1 can cherry pie filling
1 can drained fruit cocktail
1 can drained pineapple chunks
1 can Eagle Brand
1 medium Cool Whip
pecans (optional)
Mix and chill.

"Breads"
GINGERBREAD
2-1/2 cups flour
1 tsp salt
1-1/2 tsp baking soda
1 tsp ground ginger
1/2 tsp ground allspice
1/2 tsp nutmeg
1/2 tsp mace
1/2 tsp caraway seeds
1/2 tsp ground cloves
1/2 cup butter
1/2 cup brown sugar
1/2 cup molasses
2 eggs
1 cup buttermilk
Stir together 2-1/2 cups flour, salt, baking soda, spices and caraway seeds. In separate bowl, cream butter and brown sugar. Beat in molasses and ½ cup of the flour mixture. Add eggs. Beat well. Add remaining flour mixture alternately with buttermilk. Beat until well mixed (may not be smooth). Pour into greased 12 x 8 pan and bake at 350* for 45 minutes, or until inserted toothpick comes out clean.

ORANGE SAUCE BEETS
1/3 cup sugar
2 Tblsp cornstarch
1/8 tsp salt
1 cup orange juice
1 size 2-1/2 can diced beets
Combine sugar, salt and cornstarch, mixing well. Add orange juice and butter. Cook in top double broiler until thick. Add beets. Prepare 3 or 4 hours before serving.

STEAMED PORK
2 lb lean, ground pork
1 cup milk
salt and pepper, to taste
Mix together well. Put in tube pan and steam for about 1-1/2 hours. To serve, pour thickened peas over meata. This is a Swedish dish.

LASAGNA
1/4 lb lasagna noodles (about 12)
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 small cans tomato paste
2 small cans tomato sauce
1/2 tsp salt
1/2 tsp organo
1/2 tsp garlic salt
2 cups creamed cottage cheese
1 lb Mozzarella cheese
1/4 lb Parmesan cheese
Cook noodles in boiling salted water until tender. Brown beef with onion and garlic, in skillet and then add tomato paste and sauce, salts and oregano. Mix in cottage cheese after sauce has had time to cook a little. In large pan, arrange alternate layers of noodles, sauce, Mazarella cheese and Parmesan cheese. Bake at 350* for 30-45 minutes. Remove from oven and let stand for 15 minutes before serving.

MILE HIGH PIE
2 egg whites - Beat 15 minutes or until very stiff and fluffy.
Fold in:
1 cup sugar
1 (10 oz) pkg. frozen strawberries
1 Tblsp lemon juice
1 (8 oz.) carton Cool Whip
Pile into graham cracker shell. Refrigerate.

PICKLED EGGS
2 Tblsp sugar
1 tsp. pickling spices
1 tsp. salt
1/2 tsp. celery seeds
2 cups vinegar
1 cup water
1 dozen hard-boiled eggs, shelled
1/2 tsp. garlic powder
Mix sugar, pickling spices, salt and celery seeds. Combine with vinegar and water. Simmer 10 minutes. Cool and strain it over eggs. Sprinkle garlic over top. Cover and marinate in refrigerator for 24 to 36 hours. For color, can add a bit of beet juice.
